Portrait of Chef Franky in a black chef coat

The chef

Chef Franky

Franky cooks two ways because he grew up with both. There was the street — smoke, grills, food eaten standing up with friends. And there was the table — Sunday cooking that took all day and brought everybody into one room.

Blissful Bites and The Blissful Table are those two halves, kept honest by the same rule: nothing leaves the kitchen unless he'd happily eat it himself.

How he got here

  1. Early days

    A mother's kitchen

Franky learned to season by smell before he ever touched a knife properly.

  2. The trade

    Cuisine Centrale

Years spent cooking for school kids — the discipline behind every Blissful plate today.

  3. The street

    Blissful Bites is born

A fryer, a pop-up setup and one order of loaded fries that people kept coming back for. Word of mouth did the rest.

  4. Now

    The Blissful Table

Private dinners and catering for people who want the whole restaurant experience at home — or just that authentic Caribbean cuisine for their function.

What he cooks by

  • Season first

Menus are built from what's genuinely good that week, not from a fixed list.

  • Bold, not busy

Three things done properly beat nine things crowded onto a plate.

  • Feed people well

Portions that satisfy, service that's warm, and no pretence anywhere.
